The food safety teams of the Cyberabad Municipal Corporation (CMC) on Saturday, June 27, uncovered multiple hygiene violations during an inspection at Shah Ghouse Hotel and Restaurant in Gachibowli and Mehfil Restaurant in Hitech City, raising concerns over food safety practices at Hyderabad’s most popular biryani establishments.

At Shah Ghouse, officials found houseflies throughout the kitchen, poor housekeeping with grease, dirt and dust accumulation, and an unhygienic non-vegetarian cutting area that posed a risk of cross-contamination. The inspection also revealed open drains with food waste accumulation, an unclean wash area, and water leakage in the store room. The teams further found semi-prepared food items stored without labels, while the establishment failed to produce water testing records during the inspection. Gutka stains were also observed on the kitchen walls, indicating poor sanitation and maintenance.

At Mehfil Restaurant, inspection revealed inadequate kitchen space, wet floors with food accumulation and unhygienic food grading practices. The preparation of rumali roti was found to be taking place in an under-construction area, which was stopped immediately by the inspection team.

At Palamuru Grill and Bar in Kondapur, label tampering was observed on prepared food items. Stale food and expired mushrooms were found and discarded, while houseflies were present inside the kitchen. Officials also noticed grease and dirt accumulation on ceilings and lighting fixtures, a rusted freezer with water accumulation posing a contamination risk, and failure to follow hot water sanitisation of utensils. Water testing reports were not available during the inspection.

At Vijayawada Special Krishna Cafe in Gajularamaram, the kitchen was found to be partially open. Officials observed overflowing uncovered dustbins with houseflies near food preparation areas and found dough, chutney and cut vegetables stored uncovered and without labels in refrigerators. Raw materials were stored in a disorganised manner with spillages, while water stagnation was noticed near the washing area. Iron knives used for food preparation were discarded during the inspection.

At Ideal Kitchen in Madhapur, unwrapped batter and semi-prepared food items were stored in freezers, with dead cockroaches found on the batter. Inspectors also found wet floors with food accumulation, raw materials stored directly on the floor without pallets, increasing contamination risk, and insects in stored urad dal.

The inspection at J. Vishnu Vardhan Reddy Swagruha Foods revealed the kitchen was open to the outside environment, allowing dust and pests to enter. Officials found no provision to monitor Total Polar Compounds (TPC) in used cooking oil, indicating possible reuse of overused oil. Raw materials were stored directly on the floor. Water stagnation was observed near the washing area, and packed sweets and savouries were found without mandatory labels. Inspection revealed cobwebs, dust, poor lighting and water seepage in the store room, rat burrows near the packing area, and sugar beetle infestation in stored jaggery.
